Makes 4 servings
2 tbsp olive oil
1 yellow onion (chopped)
1 lb ground beef or turkey
2 medium Yukon Gold or red potatoes (diced)
2 plum tomatoes (diced)
1 bell pepper (diced)
1 carrot (diced)
1/2 cup raisins
1/2 cup peas
1/2 tsp black pepper
4 tbsp soy sauce
1/2 tbsp fish sauce
2 garlic cloves (minced)
2 cups cooked white rice
Add 2 tbsp olive oil to a large skillet and bring to medium heat. Add 1 chopped yellow onion and cook 3 minutes. Add 2 diced plum tomatoes and cook 5 minutes. Remove to a bowl.
Raise heat slightly, add 1 lb ground beef or turkey to skillet, and cook 8-10 minutes until browned.
Lower heat to medium. Add 4 tbsp soy sauce and 1/2 tsp black pepper. Add onions and tomatoes back to skillet.
Add 2 diced potatoes, 1 diced bell pepper, and 1 diced carrot. Stir and simmer covered for 5-7 minutes.
Stir in 1/2 cup raisins and raise heat to medium. Cook 3 minutes, then add peas and 1/2 tbsp fish sauce and cook 2 minutes.
Serve with cooked white rice and a fried egg.
