Makes 4 servings
Filling
1 tbsp olive oil
1 medium yellow onion (minced)
3 cloves garlic (minced)
1 lb ground turkey
1 carrot (julienned)
1 bell pepper (minced)
2 tbsp minced ginger
1/4 cup sliced green onions
Cooked white rice
Sauce
2 tbsp Thai red or green curry paste
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp honey
Add 1 tbsp olive oil to a large skillet and bring to medium heat. Add 1 minced yellow onion and cook 5-7 minutes.
Add 1 julienned carrot and 1 minced bell pepper and cook 5 minutes.
Add 2 tbsp minced ginger and 3 minced garlic cloves and cook 1 minute. Remove to a bowl.
Raise heat slightly, add 1 lb ground turkey to skillet, and cook 8-10 minutes until browned.
While turkey is browning, mix 2 tbsp Thai red or green curry paste, 2 tbsp soy sauce, 1 tbsp fish sauce, and 1 tbsp honey in a bowl.
Add vegetables and sauce to skillet and mix with the turkey.
Serve with cooked white rice and top with 1/4 cup sliced green onions.
